- 2 cups all-purpose flour
- 3/4 cup water
- 1 tsp salt
- 2 tsp olive oil + more for cooking
Mix all together and let rest while you fold laundry or pet your best furry friend ~ 10 minutes.
Divide dough into 8 portions if you want this size of tortilla. Otherwise, go rogue and make giant or tiny ones. I wanted mine to fit into this life without plastic container, so I used the lid as sort of a guide.
Roll out tortillas using plenty of flour on the surface as well as the rolling pin. Make them smooth and as round as possible and quite thin.
Heat up a skillet and a bit of olive oil then start cooking! They puff up quite a bit, and once there’s some color, flip it over to cook the other side.
Store in an airtight container or enjoy right away!
I had to have one immediately so I topped it with freshly cooked black beans, cilantro, mayonnaise, and salsa.
For reference, the plate is a small dessert plate, not a dinner plate.

Need a mayonnaise recipe?
- 1 whole egg
- Salt
- Vinegar of choice (I like white wine)
- Lemon / lime juice
- Spice of choice (paprika, mustard powder, cayenne, black pepper) – optional
- 1 cup oil of choice
Place all into a wide mouth mason jar and blend with an immersion blender until consistency is reached. Top with lid, and store in the same container.
